
Miso Cod with Sesame Broccoli, Edamame & Gut friendly Dressing

Ingredients
- 2 cod fillets (about 150g each)
- 1 tbsp white miso paste
- 1 tsp maple syrup or honey
- 1 tsp toasted sesame oil
- 1 tsp tamari or soy sauce
- 1 medium broccoli head, chopped into florets
- ½ cup edamame beans, shelled (frozen or fresh)
- 1 tbsp olive oil
- 1 tbsp sesame seeds
- 1 tsp SFG Biome Gut Superblend powder
- 2 tbsp extra virgin olive oil
- 1 tbsp freshly squeezed lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste

Make the glaze:
Combine miso paste, maple syrup, sesame oil, and tamari in a small bowl until smooth. -
Coat the fish:
Lightly brush the glaze over each cod fillet and leave to rest for 10 minutes so the flavors meld. -
Steam broccoli:
Place broccoli florets in a steamer basket over boiling water and steam until tender but still crisp, about 5 minutes. -
Cook edamame:
Heat olive oil in a skillet over medium heat. Add edamame and sauté for 3-4 minutes until warmed through. Season with salt. -
Toast sesame seeds:
In a dry pan, lightly toast sesame seeds over low heat until golden and fragrant, about 2 minutes. -
Pan-fry cod:
In a clean pan over medium heat, cook cod fillets for 3-4 minutes on each side until opaque and flaky. -
Prepare dressing:
Whisk together SFG Biome powder, olive oil, lemon juice, Dijon mustard, salt, and pepper until fully combined. -
Serve:
Divide broccoli and edamame between plates, drizzle with dressing, place cod on top, and sprinkle with toasted sesame seeds.
